Since one of the main purposes of mixing is to develop the gluten, you need to be careful not to tear the gluten strands that you are actually creating during mixing. What is gluten and how does it develop? Gluten is the main protein in wheat. It consists of two parts—glutenin and gliadin— that combine when they are hydrated to form gluten, and are responsible for adding structure and flavor to the bread.

This should ideally happen before you begin baking. While I know this may seem like an arduous task, believe me when I say it is well worth the effort.
